Today was another eventful day.. Which isn’t usually a normal thing – I usually like to take it easy at home. I work on school work (I am going to school for video game design online), play with Hudson, play video games, clean the house, do some cooking and honestly just relax! That is usually during the week, when things are slow at home and it is just Hudson and I. As long as I throw in a good long Way of Gray workout, I feel great!
My morning started off pretty rough as I didn’t get a lot of sleep because Hudson was up quite a few times and was officially awake by 6:11AM; So to put a pep in my step I made my FAVORITE drink. Yerba Mate! It is a delicious tea that wakes you up just as much as coffee but instead of caffeine it contains mateine which is a stimulant as well but doesn’t leave me feeling as crummy as caffeine sometimes does. It comes from the yerba mate shrub that grows in rainforests and contains as many as 24 vitamins and minerals! I highly recommend trying it over coffee, for its nutritional benefits and its delicious taste, although it is definitely an acquired taste and tastes best with agave, in my opinion.
Once getting my morning drink down I cook up our usual breakfast, Egg and Sausage scramble. We have Royal Crest deliver around 5 dozen eggs every week which really helps with our excessive egg eating. It is such a flavorful breakfast (And people say healthy food isn’t good tasting!) and we eat it quite regularly. It is very easy to get carried away with it though, especially when I add banana pieces as it adds a little bit of sweet to the salty. Which is why it is important to remember that eating appropriate portions is crucial, don’t over eat and don’t eat until you feel like you’re going to explode. Just eat until you feel good. You know your body better than anyone else so just eat appropriate amounts for yourself.
After breakfast, Marret and I went and got her a donut before I dropped her off at her mother’s house and I quickly headed out to pick up my best friend, Lorna, who is in town from college in California for Spring Break. She is my son’s God Mother and a long time very good friend of mine. We had a very fun day at the zoo planned as it was another 70 degree day.
I had packed some carrots, left over scramble from this morning, some tea, and water – It definitely helped distract from the cotton candy, popcorn and pretzels they sold at every corner!
We had a wonderful time walking around; The weather was beautiful, it was nice to have Hudson outside (He looked adorable in his blue floppy hat from Grandma) and just to spend some quality time with Lorna was wonderful. And Hudson was actually able to notice the animals this time! He would watch as they move! It was a very proud moment for me, seeing him grow so quickly
After a little sunburn and a very tired baby we decided to take our leave and head to Jamba Juice for an açaí bowl as I have never had one before! I have got to say… They are BEAUTIFUL and delicious! Lorna got an açaí bowl and I got a pitaya bowl – I actually liked mine better! It was much sweeter, but didn’t look as pretty since I omitted granola from mine to keep it paleo
I said my sad goodbyes to Lorna and came home to my family. I baked a very delicious coconut/almond flour and egg dredged chicken and served it with a side of watermelon. Made for a very healthy and active day. Now ready for a relaxing week
Will be posting the recipes I make this week! Let me know if you make it and how it turned out!
