If you’re from a higher altitude you know how FRUSTRATING baking paleo desserts can be. I have cried from many dessert disasters.. You smell it and CRAVE it but then when you take it out of the oven it’s raw in the middle and refuses to cook, no matter how much longer you try and leave it in. I gave up – I was so done trying.. Until now. It seems like flour is the obvious struggle with paleo baking at higher altitudes – So why not attempt a high altitude brownie WITHOUT flour?!
Well I did.. And it is INCREDIBLE. And I’m sure it’s good at ANY altitude. I don’t mean to brag… But these are the most delicious brownies I’ve ever had.. And COMPLETELY healthy/paleo!! Next time I’m going to add some nuts – But MAN these are AMAZING.
It is very minimal in it’s ingredients but the flavor does NOT reflect this. It’s easy, quick and I’m sure with a side of paleo ice cream would be even MORE dangerous. But it’s paleo so no harm, no foul! Even the kids enjoyed it! Snuck a little piece inside my step-daughter’s lunch today – She’s gonna love it!

My Hubby and I are mega sick with something.. Our coughing has been so bad it’s nearly impossible to sleep at night. So I ran to the grocery store today to grab some ingredients to make some homemade paleo chicken noodle soup..

Y’all – Just got my new air fryer for Christmas and it’s AMAZING. You can throw nearly anything in there and cook it health-ily in half the time! Our first experiment was with chicken wings and OMG they were the best tasting wings I’ve ever had.. (Not to toot my own horn 😉 )
I wish I could add more photos and details to this post but it’s literally just that easy that it only takes a few paragraphs! We made two batches: Half BBQ and half buffalo. In each bowl we threw our wings in that we had bought from Sprouts then seasoned them with salt, pepper and cajun seasoning then topped them with paleo-friendly sauces!
I set our air fryer to 360°F, placed the wings in the basket evenly and cooked them for 15 minutes. It could fit about 7-8 wings and we had 15 so it worked out perfect for each batch. We removed them from the basket and they were cooked completely through! The skin was incredibly crispy and flavorful (Without the need of deep frying!)
We’re officially hooked and already trying to figure out what ELSE we could make with it! We are running back to the store today to grab some more wings so we can make some for some friends coming over for the Cowboys Playoff game and I cannot wait for someone else to try them out!

Was recently asked what my favorite paleo meal is. I would say 100% it’s my homemade green chili and gluten-free rolls.. Try them for yourself!
Simplykaraliz’ Paleo Green Chili
1 lbs of Shredded Pork or Any meat of your choice (Mine was leftovers from Crockpot Pork I made)
7 Hatch Green Chilis
2 1/2 cups Organic Chicken Stock
2 Tbsp Coconut Oil
1/2 Yellow Onion, diced
Juice from 1 lime
4 tbsp Garlic Cloves, minced
1/2 Cilantro, half bunch
1 can of diced green chilies
Handful / Or 1 Full Jalapeño
2 tbsp Cumin
1 tbsp Paprika
1 tbsp Black Pepper
1 tbsp Sea Salt
In a large pot, melt your coconut oil and add your diced onions and minced garlic. Cook until your onions are brown.
Add the cumin, paprika and black pepper to the mixture and combine.
Add your chicken broth and meat, bring to a boil.
Turn the heat to low and allow to simmer.
Cut up your chilis and peppers (if applicable) and throw into pan. Cook them until blackened.
Put chilis, jalapeños, juice from your lime and cilantro into the blender to desired consistency (I like mine smooth but a little bit chunky)
Add your blend and your can of diced green chilis to the pot and allow to simmer for 1 hour.
(Anymore time will make it really dry, can add more broth at any point if needed)
Chebe Bread – Rolls
Chebe Focaccia Bread Mix
2 tbsp Olive Oil
4 tbsp Almond Milk
Follow directions on the box – However, if you want the rolls: Oil a muffin pan and place pieces of the batter in the bottom of each muffin tin and spread till it fills the bottom. And bake for 25 minutes at 375°F.
Anyone else ECSTATIC that football is coming back?! WE ARE. We’re mega huge football fans in my house and always have large parties and delicious food.. But when you’re a healthy eater the options at stores are not very “friendly” at all.. So here are some delicious alternatives to some tailgating faves!
Our favorites are pork green chili sliders (with Birch Benders Paleo Pancake Mix made into buns), buffalo chicken (made with drumsticks and buffalo sauce), and bacon wrapped guacamole peppers! They’re all incredibly delicious – And SPICY. Which is of course necessary for football Sundays 😉
I am constantly asked how I make smoothie bowls.. They’re easy, quick, simple and can be pretty, but it also took me awhile to figure out how people were making these beautiful creations at first. I like having the smoothie consistency along with chunks of fruits/veggies/nuts which is different from what you’d get in a standard smoothie obviously.. So it’s nice to change it up if you have a smoothie for breakfast everyday.
The smoothie bowl base is made with whichever fruit you want to use but with less water/milk you’d use in a standard smoothie so that it’s a little more thick/chunky. Then top with whatever you want! Super simple right?!
My favorite is a base of 3 super ripe bananas and meal replacement powder with almond milk! I like mine thick so my fruits can sit on top without sinking in 😉 These are by far my favorite breakfasts.. Try one for yourself and let me know if you do a delicious mixture I need to know about ❥
Happy Saturday! Last night I wanted to surprise my Husband with a lasagna dinner. It’s been so long since we’ve had some and it’s been a point of conversation lately so decided I would go out and grab some Cappello’s Paleo Lasagna Sheets and create something delicious for dinner!
I ran to Sprouts and grabbed some healthy ingredients I thought would make a tasty addition to my dish and I’ve got to say the STAR of the dish was this incredible almond cream cheese spread I found! It’s paleo and gave the dish that cheese taste it so desperately needs!
It literally took me only 10 minutes to prepare the whole meal. 10 MINUTES. (Besides the actual baking for 50 minutes afterward 😉 ) Here is my recipe and I know y’all will LOVE it cuz we did! My Husband woofed it down!It turned out great and wasn’t an expensive meal at all! It makes so much and I cannot wait for lunch today for leftovers.. hahaha! I’ve been making a ton of holiday goodies for my Husband’s coworkers this year because I know I’d want some if I was in an office all day! One treat I made that got SO many compliments was my reindeer poop – So much so their was word around the office that I make Christmas Crack, hahaha! People asked for a recipe so decided to post it on here as well! It’s a Christmas tradition and I guess now an office tradition! Obviously this isn’t paleo but we make it for family and friends and they love it so why stop 😉
The cookie butter makes a HUGE difference! It’s usually made with peanut butter but it’s 1,000 times better with cookie butter! I was asked how I managed to squeeze even MORE sugar into the treat but it was really just using the cookie butter!!
It’s almost Halloween!! Our kids are SO excited. They’ve nearly got their costumes by the front door hahaha! We’re excited for all of the plans we have starting today til Halloween! Pumpkin carvings, haunted houses, festivals, Boo at the Zoo, and ghoulish treats!
For dinner tonight I decided to make the kids some delicious and hilarious looking goodies – Mummy Dogs and ghost bread! I preheated the oven to 350°Fand grabbed a roll of Crescent Rolls, some cheddar cheese and a pack of Oscar Meyer Weiners!
I opened the dough roll, laid it out flat and cut the dough into long strips to make it easier to wrap the dogs in their Mummy Wrappings (I placed the cheese over the weiner before wrapping it) Obviously they weren’t going to eat ALL the weiners so I used the leftover dough to make Ghost Bread (I didn’t have any Halloween cutters so I used a gingerbread man and joined together his legs hahaha!) and BRAINSS (Which was balled up leftover dough with red food coloring)!
I placed the pan in the oven and cooked for about 13-15 minutes! I kept a watchful eye on the ghost bread since they were a little thin (But they got SO fluffy! So they cooked ALL perfectly at the same amount of time!)
Once they were done I dotted eyes on the mummies and biscuits with ketchup and mustard and the kids DEVOURED them! I added a jack n’ cheese cup to their dinner for a cute Halloween extra 😉
It’s little meals like this that really get the kids excited for Halloween AND helps them eat if they’re being picky hahaha!
Today, we decided to have some family also from Louisiana to come over and root for the LSU Tigers with us! So we wanted to have some good drinks to serve everyone that’s also paleo still! SO I just randomly came up with an idea for a drink and it came out amazing! Try it for yourselves and let me know what you thought or what you did differently ❥
